You may have gathered by now that we take care of the environment here at NOMAD. Our motto is: waste nothing…everything can be transformed, even what’s on your plate!

1.3 billion tonnes of food are thrown away or go to waste every year across the world…that figure is enough to make your head spin! So at NOMAD, we put in place simple actions every day in order to set things straight!

Cooking with zero waste is not just about paying attention to the use-by date on fresh produce, using up fruit and vegetables in good time…It’s also about learning to reuse leftovers with a little bit of skill and imagination in order to concoct really tasty dishes!

Coup de coeur Roissy

Audrey is our catering expert at NOMAD. When she’s not on duty in the lobby, she thinks up and creates ideas to surprise your taste buds.
Healthy eating is her favourite topic. Reducing waste is no less important to her and has become a real priority. Audrey shares some recipes with us that have been tried and tested by NOMAD customers.

A speciality of NOMAD Hotel Le Havre

If you enjoy the buffet breakfast at the NOMAD Hotel Le Havre, you might be lucky enough to try the famous NOMAD pudding ;)
Here is the recipe so that you can enjoy it when you get back home!

Preparation time: 15 minutes
Cooking time: 45 minutes
Can be stored for: 48H

Ingrédients for 1 pudding :

Around 10 pastries
3 whole eggs
50 cl milk
- 2 tablespoons sugar
- 1 piece of fruit (apple, pear or banana) put into chunks
 

Cook in the oven for 45 minutes at 180°!

Cut

Cut the fruits into chunks

Mix

In a big bowl, mix all of the ingredients (pastries, eggs, sugar, milk, fruit)

Blend

Blend in the preparation with your hands

Pour

Put a baking sheet in a mould and pour the preparation

A speciality of NOMAD Hotel Paris Roissy CDG

If you’re staying at the Roissy CDG hotel, you can try Audrey’s famous ham croissants at the buffet in the evening!

Preparation time: 15 minutes tops!
Cooking time: 15 minutes

- Cut the croissant in half lengthways
- Spread a layer of béchamel sauce on the bottom half, add ½ slice of ham and some grated Gruyere cheese
- Top with the other half of the croissant
- Brush with béchamel and top with grated Gruyere cheese
- repeat for each croissant
- Heat in the oven for around 15 minutes at 200°C
